
Stop Tossing Your Bread: A Better Way to Handle Oven Hot Spots
There is nothing more frustrating than pulling a tray of bread out of the oven only to find the edges are burnt to a crisp while the middle is still raw. It’s a waste of ingredients, a waste of time, and a total headache for your team. Most of the time, this happens because hot air is unpredictable. It drifts. It creates cold spots. It just doesn’t hit every loaf the same way. We’ve found a way around this by swapping out those old-school convection elements for a mix of quartz and ceramic infrared (IR) heaters. How it actually works Think of it this way: instead of relying on air to carry the heat, IR sends energy straight into the dough. We use quartz tubes to get that short-wave heat hitting the surface fast. But if you only use quartz, you risk scorching the outside before the inside is done. That’s where the ceramic heaters come in. They provide a steadier, medium-wave heat that cooks the loaf evenly all the way through. The tricky part: Getting the specs right This is where a lot of people mess up. If you cram too much wattage into a small space, you’ll fry your filaments in no time. We prefer to spread the load across different zones. And to keep things steady, we use PID controllers. They’re incredibly precise—usually within ±1°C. It stops that annoying “yo-yo” effect where the oven swings from overheating to cooling down every few minutes. The reality of the install The good news? These are mostly drop-in replacements for industrial racks. We also use reinforced connectors because we know how much a commercial bakery vibrates. But, I want to be honest about the trade-offs. Quartz tubes are fragile. If your staff is rough during the cleaning shift, they will crack. You’ve got to install guards to protect them. Also, because IR is so dense, the outside of your oven is going to feel hotter than it did with a convection setup. Just double-check that your ventilation can handle the extra heat in the room so your bakers aren’t roasting while they work.
